A non traditional way of making Roast Beef, which will be well done, insanely tender and can be pulled apart with your fork.
For this Roast Beef you’ll need…
1 eye round roast (about 5-6 lbs)
5 sprigs thyme
2 tablespoon parsley
1 small onion
1/2 teaspoon salt
2 cups beef stock
1/4 teaspoon black pepper
1 stalk celery
